    That’s fantastic! My first thought was to actually knit the marzipan, but then I figured it would melt. So I had to come check out your tutorial, because I was certain it would say something like, “Freeze needles for 3 days beforehand, and be sure to wear insulated gloves…”

    I’m saving this to my list of projects, under the category of “ambitious but not impossible.” Thanks!

    Someone was asking about marzipan made without egg whites. Note that you need SOMEthing for an emulsifier, otherwise when you grind the almonds they turn into oily crust that’s nigh-impossible to clean out of your grinder.

    The Elizabethans used gum tragacanth; grind it to a powder and knead it into the almond mush right after the first grinding.

    When I make the marzipan Boar’s Head every winter (and I use egg white because it’s easier, but I have used gum tragacanth experimentally), I grind the almonds twice on the coarse disk and four more times on the fine disc. It’s still not as fine as the commercial stuff — I don’t know how many times you’d have to fine-grind it to achieve that — but it’s adequate for sculping.

    QUESTION…I HAVE REC. 4 MARZIPAN WITHOUT EGG WHITES…SAIS HAS A 2 MO REFRIG “SHELF” LIFE…CAN IT B FROZEN WHEN AIR TRIGHT..IF SO HOW LONG??? FIRST TIME 2 TRY…THANKS JEG

    In addition to the “Recipes for Vegans” recipe for marzipan above, I’ve also found one on VegWeb – http://vegweb.com/index.php?topic=6723.0 . I think it’s interesting how the VegWeb one calls for only almonds, sugar, and rosewater, while the other calls for almonds, margarine, flour, sugar, and almond essence. I’m going to have an interesting time making these, and such a great time making the cupcakes themselves!

    On another note – I know that World Market stores here in Texas carry marzipan for baking, though I haven’t looked to see if it’s vegan.

    Marzipan!

    3 cups sugar
    1 cup water
    4 cups ground blanched almonds

    bake it up! the almonds usually come in 2 1/2 cup bags (so get two..) and ya need the expensive “blanched” so ya can grind them to smithereens!

    That was awesome!!!!!!
    I am a giant marzipan fan myself.
    I make white choc-chip muffins with marzipan decor on the top…They taste “the best”…!!! I also make marzipan figurines e.g animals. for a local sweets store, they offer me 15 bucks per dozen I make, but I dont take the money ’cause I just do it for fun!
    It was so awesome though, your tutorial.

    Just wondering if anyone has tried this with fondant? If so, does it work the same? Any major catastrophes? I want to try this so bad for my knitting clubs “yarn tasting” next week.
