Did you buy pre-made marzipan or make it yourself? Every recipe I’ve found has egg whites in it. :o(
Also, any idea how long marzipan will keep for? Does it need to be refrigerated?

Jessica - I used pre-made Odense brand marzipan. After I opened mine, I tightly wrapped it and refrigerated it. I used it again today, two days later, to make the tutorial. It seemed fine, but had dried out a little. I believe the box said it can be frozen.

Also: before I saw the tutorial, I was a little worried you might have actually knitted the marzipan and I am now relived that it wasn’t like that. lol.

Those turned out soooo cute! If you plan on ever making a lot of these, I would buy some Fimo or Sculpey, make a texturing plate that looks like knitting, bake it, then use it to stamp the knitting right on your sweaters/scarves, whatever. You can also make the finished object with the clay instead of marzipan, bake it, mold some clay around it to make a negative mold, bake that one, then you’ll have an easy push mold. Look for clay crafter/jewelry crafter websites for tutorials. Nice work.

That’s fantastic! My first thought was to actually knit the marzipan, but then I figured it would melt. So I had to come check out your tutorial, because I was certain it would say something like, “Freeze needles for 3 days beforehand, and be sure to wear insulated gloves…”
I’m saving this to my list of projects, under the category of “ambitious but not impossible.” Thanks!

Someone was asking about marzipan made without egg whites. Note that you need SOMEthing for an emulsifier, otherwise when you grind the almonds they turn into oily crust that’s nigh-impossible to clean out of your grinder.
The Elizabethans used gum tragacanth; grind it to a powder and knead it into the almond mush right after the first grinding.
When I make the marzipan Boar’s Head every winter (and I use egg white because it’s easier, but I have used gum tragacanth experimentally), I grind the almonds twice on the coarse disk and four more times on the fine disc. It’s still not as fine as the commercial stuff — I don’t know how many times you’d have to fine-grind it to achieve that — but it’s adequate for sculping.

In addition to the “Recipes for Vegans” recipe for marzipan above, I’ve also found one on VegWeb - http://vegweb.com/index.php?topic=6723.0 . I think it’s interesting how the VegWeb one calls for only almonds, sugar, and rosewater, while the other calls for almonds, margarine, flour, sugar, and almond essence. I’m going to have an interesting time making these, and such a great time making the cupcakes themselves!
On another note - I know that World Market stores here in Texas carry marzipan for baking, though I haven’t looked to see if it’s vegan.
