Lemon Cranberry Muffins

I’ve been busy creating recipes for my cookbook project, but I haven’t forgotten about you!

On Thursday Stewart and I are taking our honeymoon to Belize, and since I’ll have access to a kitchen, I’ll hopefully have some fun tropical recipes to share while I’m there.

In the meantime, here is a sneak peak of some of the things I’ve been working on!

    The picnic sandwich looks absolutely scrumptous. I do something similiar: I get a round, rustic loaf. Hollow it out. Stuff it with whatever veg is around (tomatoes, lettuce, arugula, etc.). Add pitted olives and capers. Pour on extra virgin olive oil. Maybe add feta or someother cheese if I’m looking for something extra hardy. And wrap and put something heavy on top (pot) to compress for a few hours. By the time we eat, flavor is infused throughout and it is amazing.

    Hey, you might want to check out Urban Vegan–she went to Belize recently with her husband. I’m sorry to say she described it as not particularly vegan friendly.
