Thai Peanut Noodles with Kale, Carrots and Tofu
I love peanut sauce. I love the way it tastes, I love how easy it is to make, and I love that I always have the ingredients to make it on hand.
Peanut butter, soy sauce, sugar, and “spicy” – sometimes I use hot chili oil, sometimes I use chili sauce, sometimes I just use chili powder. Mmm.
I tossed the rice noodles with the sauce, some sauteed kale, shredded raw carrots, and sliced Golden Sesame Tofu from Whole Foods, which I great when you want tofu and don’t want to go through the bother of pressing it and flavoring it.
