Cheesy Muffin Breakfast, with tea

This is one of my favorite breakfast things to make. Not only is it quick and easy (as long as you have some leftover cheesy sauce), but it’s also vaguely similar to eggs florentine, without the icky eggs. Crispy, hot, cheesy, spinachy: what else could you ask for?

Simply slather the cut sides of a halved english muffin with cheesy sauce and fresh baby spinach and pop them into a 350º oven, directly on the rack, until toasty. Yum.
