Hurry Up Alfredo with Basil

Alright, are you ready for the first recipe preview from the VYY cookbook?

This is one of my favorite recipes in the book. I make it almost once a week. It’s the perfect creamy pasta sauce when you’re feeling like alfredo. It’s also a great sauce for casseroles, over steamed veggies, on top of lasagna — wherever you want a basic creamy sauce. So not only is it really versatile, but it’s also really quick!

The whole sauce is made in a blender, so the faster you can toss ingredients into a blender, the faster it’s done. This also makes it super easy for additions. Recently I’ve been adding whole roasted red peppers (the kind they sell water-packed in jars).

Hurry Up Alfredo
Makes 2-3 Servings

1 Cup Soymilk
1/3 Cup Raw, Unsalted Cashews
1/4 Cup Nutritional Yeast
3 Tbs Low-Sodium Tamari or Soy Sauce
2 Tbs Earth Balance Margarine
1 Tbs Tahini
1 Tbs Fresh Lemon Juice
2 tsp Dijon Mustard
1/2 tsp Paprika (smoked is awesome)
1 Pinch Nutmeg
2-4 Cloves of Garlic, optional
Black pepper, to taste

Add all the ingredients to a blender and blend until smooth. This may work best in a high-speed blender (like a Vita-Mix), but you can definitely make it in a regular blender. Just blend extra-long, or perhaps strain if if you want it perfectly smooth. Tiny bits of cashews won’t hurt anyone though!

If you’re making this sauce for pasta, drain the pasta and return it to the hot empty pan. Pour the sauce over, place on medium heat, and stir until heated through. Serve with lots of fresh cracked black pepper. I love it with steamed broccoli added in!

    This pasta is tremendous! So much healthier than regular Alfredo! Love it!

    I am in definite want of a Vita-Mix, but I did find a pinch hit method for small amount of nut grinding- I’ve been using my coffee grinder (i.e., spice mill), and then transferring to the blender (if necessary). It only works with small amounts (1/4 cup), but it doesn’t take long, so a second batch is okay!

    This sounds amazing. I’ve been making my own Alfredo sauce from nutritional yeast, soy milk, and a few spices, but yours sounds so much better!

    Hopefully when I go to the store tonight they’ll have raw cashews so I can make this!

    Do you think unsalted roasted would work? My local stores are very lacking in their raw nuts :(

    This looks great. I love quick sauces for nights when I get home late! I used to hate cream-based sauces pre-vegan because the dairy fat in the cream made me feel ill, but now I am vegan I love sauces like this one!

    Congrats on your new book. I’m not vegan, but vegetarian. Have used a few of your recipes and they’ve always worked.

    Cashew sauce in pasta sounds good. We use it in gravies in India and I know how good that is.

    hurrah, congrats on being published. :) i would like to ask, for those of us in such veg-unfriendly places (where nutritional yeast is nowhere to be found), what could i use to substitute it? every vegan cream sauce calls for it. :(

    I bought this book two weeks ago at Barnes & Nobles. There was only one on the shelf so maybe it was a mistake. I’ve tried a several of the recipes and about half of them I would make again. My family converted to vegan in April and it’s not easy finding meals that please kids & adults.

    Ok so, I was recently at the Barnes and Noble in downtown Seattle and I saw a book called “Vegan Yum Yum” and I thought to myself, hm, that’s weird, her book hasn’t come out yet. But lo and behold, it is the exact book your posting about now. And it was for sale last week? I’m very confused!

    Congrats on the cookbook! A lot of hard work! This recipe looks great, I find myself craving alfredo often, but I just remember the ingredients. My eyes skim past the cream and milk but when I hit egg yolks I remember why I don’t eat it anymore! Last year we found that my vegan son is allergic to cashews. NOOOO!!!!!!! So I’ve had to rethink so many recipes. Keep up the good work!

    This recipe was a huge hit with my family! And as a bonus we ate twice as much broccoli as we usually do.

    However, my sauce was much more yellow than the picture with the post. Did I do something wrong?

    I made this recipe with rice milk, and only had roasted and salted cashews on hand, it was more of a “brown” colored sauce, but it was super delicious. Looking forward to making it with raw cashews and soy! Congrats on the book!

    Congrats on the book! Just wanted to chime in to say that my sauce came out brown as well, not white like the picture. I assume it’s the soy sauce, perhaps? Is there a way to make it nice and white like yours? It might be a bit more aethetically pleasing. Thanks for the tip. The sauce was rich and yummy.

    I made this last night and mine was quite yellow too which was a tad disappointing (didn’t affect the wonderful flavour though).

    I think I may’ve used the wrong cashews (unsalted which I think are roasted instead of natural) as I didn’t realise there was a difference.

    Also my nutritional yeast is very yellow too.

    My husband made this over the weekend, and it should have been good but he doesn’t really pay attention to detail — he used vanilla soy milk – don’t do that! On the up side, it was really fast, not too scary for my novice cook/husband, not expensive, and it will be a great fast go-to dinner – without the vanilla.

    I am looking for ways to avoid gluten and milk in my diet, and this is just the perfect solution for having a white sauce! I found that adding cashew butter instead of the nuts will make it easier to make a smooth sauce even without a Vita Mix. Also omited the nutritional yeast and added 1 tbs tomato puré for a great pasta bolognese… Thanks for putting me on all of the ideas!

    Hey Lolo, just wanted you to know that I purchased the cookbook right away (sorry, couldn’t wait until the 16th so I bought it on the 15th). Actually, I purchased it for a friend’s housewarming gift thinking I would buy another for myself soon but when the book showed up, it had a bunch of ripped pages in it! The corners were torn off so that I couldn’t read the ingredients! I’m sending it back to Amazon for a replacement. Totally not implying that this is your fault, but I saw other comments on Amazon indicating that other people’s orders arrived damaged too. I would call the publisher if I were you…

    Anyway, I made this sauce just now and I think there must have been a misprint when it comes to the soy sauce. Like some other posters, my sauce came out kinda dark brown and incredibly salty. Did you mean to say 3 tsp soy sauce and not 3 tbsp? Anyway, I doubled the recipe but did not double the soy sauce and the color and taste improved. I’m still wondering how you got your sauce so nice and white though, because mine took on a yellow-y hue after doubling and I was never able to get it to look like your picture…

    Hey Lauren! I just have to tell you that, having just received my VeganYumYum cookbook in the mail, it is the most beautiful cookbook I’ve ever seen (before yours, it was vegan brunch…).
    I love love love that you have a picture for every recipe–that’s almost unheard of! And they’re all so beautiful too. And then, recipe-wise. Let’s just say whenever I get a new cookbook, I sit down with it for an hour with a pad of sticky notes, and read through it completely, marking all the recipes I want to make for sure. I don’t think I’ve ever marked such a high percentage of recipes in a cookbook before. At one point, I was like, maybe I should mark the ones I don’t want to make…

    Anyways, this book is definitely something to be proud of. I literally can’t wait until I can journey into its delicious pages. For now, I’m at school, so the best I might be able to do is one of the baked goods. But I just wanted to thank you for your lovely contribution to the vegan world. I think I will treasure this book in my collection forever!

    Yeah, mine tasted a bit funny also, and now I realize that it’s the soy sauce. Next time, I’ll try 3 tsp. instead of 3 tbsp. It came out kind of brown and extremely salty. I’m going to try to balance it out with pepper to salvage this batch. Thanks lolo!

    I’m just about to make it for the second time and I’m definitely cutting back on the soy sauce to try and get rid of the ‘bite’ and make it taste creamy.

    Perhaps the paprika is also to blame for the dark colouring.

    i just made this and it is so yummy. mine came out very watery, so I suggest adding a bit of cornstarch and heating it up on the stove so it thickens. It is sooo delish over whole wheat pasta with sauteed spinach, red onion, and cauliflower. You should make this RIGHT NOW!

    I made this sauce for dinner tonight and it was wonderful! I bought the book last week and am planning to try a whole bunch of other recipes, too.

    One question: would this sauce work as well with almonds instead of cashews? Or pine nuts? My son is highly allergic to cashews but he can eat almonds and pine nuts with no trouble.

    Wow! I found your blog a few days ago, and knew I had to try this recipe. I made it tonight (with green beans), and it was AMAZING! Seriously, the absolute best vegan “cream” sauce I have ever tried. I still can’t get over how simple it was!     Woah. I made this for dinner last night, and not only was it delicious, it was a totally zero-stress preparation. This recipe is pure genius. All the ingredients are things that I always have sitting around and I didn’t have to chop anything! Hooray for amazing food with no prep work!

    You’re totally my hero.

    I even got my parents to eat it, and they’re totally the kind of people whose meals consist of meat with a side of meat.

    This tasted awesome, but I had the yellowing problem, along with it being a little too watery. I used some corn starch and heat to thicken it up, but I’m wondering if there’s something else I did wrong? I think I followed the recipe exactly. The soy sauce typo that people have mentioned makes sense. And congrats on the book! I can’t wait to get it!

    don’t use sweetened soy milk! i made that mistake and it came out really weird. also! don’t combine the sauce and pasta until you serve it. i combined it, waited 5-10 minutes and it became one big clump of pasta. i might have used too much pasta, also. and that’s another thing, i know it says it in the book, but maybe you should specify here how much pasta to use? it was delicious nonetheless!

    Just made this a second time – just as delicious as the first, even with a tad less soy sauce (2 tbsp). Next time, I’m going to play around with adding even more nutritional yeast and raw cashews, since they’re both so yummy.

    Just made it myself and thought while following it 3tbsp can’t be right but went against my instinct and followed the recipe hit the blend button and went oh ooo.
    then i looked at the sauce bottle and it said double strength opps.
    I just added more cashwes,dijon,lemon and some soy yogurt to the mix,
    I have my own recipie for a sauce like this that I think i will take the best bits from both and use that from now on.
    I got the book yesterday and have tried 3 recipes

    I RARELY comment on anything but I felt it totally necessary to after purchasing your cookbook and trying a few recipes. Thank you! I totally love cooking and find it relaxing and self satisfying. I made the transformation to a plant based diet over a month ago and have never felt better. I’ve tried several different vegan recipes including Cheezy sauces, but have never had one that I could say is just as good as cheese. Well my friend you have accomplished that.     I have made this 5 times in a week! I omitted the soy sauce completely. I don’t think it needs it. Tonight I used it to make my famous “Mac and Cheese with Tofu and Peas” and the kids didn’t even realize it was vegan! Your recipes make the transition to veganism so much easier.     I am brand new to the vegan world, as it seems to be the ticket for my son with dairy and egg allergies. The few recipes I have tried already have been wonderful! This creamy sauce looks like a great recipe to have on hand! However my son is also allergic to nuts, so is there anything I can substitute the cashews for without compromising the taste/texture of the sauce? Thanks!! Loving my yum yum app!!

    I think it’s awesome that you are making a book of your recipes! I can’t wait till it comes out.

    One thing though: In the pictures it looks like the size of the book is small-ish and paperback. It’s pretty hard to cook with a book that you can’t leave open on a counter. I seriously suggest making it a hardback and a little bigger so that people will actually be able to use it when it comes out! I think you will sell more that way also. Thanks for your amazing blog! :)

    I’ve always loved this blog but am AMAZED by this book! It’s gorgeous, the recipes look delicious, and the photographs are beautiful. I have just finished eating an obscene amount of oven-roasted kale from the book and I cannot say how good it is. One last rave of the book–I couldn’t believe how many recipes there are!     Your book is amazing! I’ve had it 4 days and I’ve already made 2 things. The Hurry up Alfredo is to die for. My 10 month old and 5 year old loved it.

    I made the blueberry waffles this morning and they were so good. It makes a ton of waffles so I have extras for the mornings when we are in a hurry.

    The photos in your book are amazing. I’ve never actually read a cookbook before but I found myself curled up in bed reading it. Well done!

    I just made this last night, it was SO GOOD. I would definitely recommend blending it for a good long time, I thought I blended it for long enough but it was still chunky, think it’s time I invested in a food processor! It was still amazing chunky though…

    Just bought your book this weekend. The photos and the way the recipes and ingredients are laid out was very appealing to my overworked mind.

    I was especially interested in the cheesy recipes because my 17 year old has grown very intolerant of dairy – gives her an instant migraine – even a teeny amount. She used to love Caesar salads, so I made yours – WOW. Delicious and tastes so real. And easy! Getting ready to try more recipes. She longs for mac and cheese – so that is next.

    Oh, wow. I just made this for dinner tonight, and it was incredibly, surprisingly delicious. YUM YUM indeed! I added some basil and diced jalapenos, and it was divine. I had to substitute almonds for cashews (when I went to use my stored cashews I discovered they had gone rancid) and it was absolutely delicious.     @BlessedMama: Has there been any publicity or signings? I’d have gone to any event that was even remotely close to us, but I haven’t heard anything.

    At first when the blog went silent, I figured it was the publicity rush. But it doesn’t seem to have been planned because she mentioned that she’d share more recipes from the book. Still I didn’t worry because she was still posting to Twitter, but even that’s been quiet recently.

    Life just gets in the way, I guess. Hope it’s nothing serious – that it’s all good doggie fun.

    VYY is still one of our favorite go-to spots for great recipes and I’m very glad to have the book. One of the pancake recipes was a dinner saver just the other night when I ran out of ingredients for what I had planned. Mmm, breakfast for dinner is such a treat!

    inexpensive and very energy efficient. There is no can to recycke when you are done. Lots of interesting beans are available that aren’t available canned. I make beans several times a week, and then they can be used in many different dishes throughout the week. The cooked beans last for about a week. I am a fan of Presto brand pressure cookers. Be sure to get a stainless steel one, not aluminum. Four quart is ok, six quart probably more useful and why not get the bigger one. I usually cook two cups of dry beans at a time. I’d be happy to share pressure cooking tips with anyone who is interested.

    The author of the site has no obligation to keep writing, nor to even respond to the readers. No obligation, but common respect to her followers. Are we the same folks who would be buying her cookbook, and through our feedback perhaps even helped shape the book?

    Don’t you think it a wee bit strange, that she disappears as soon as her book is released? I hope everything is OK, but please realize this blog isn’t just your average blog, it has brought her success, money and a reputation a long with it. She shouldn’t be ignoring all of her readers who got her where she is today.

    If we knew we were exchanging a fabulous blog with fresh recipes and photos for one cookbook, I don’t think any of us would have bought the cookbook. I would’ve donated to the blog, and I’m sure a lot of people would’ve, if you wanted to make some money off of all of your fans.

I certainly don’t feel like I’m owed posts, or anything else, by Lolo, and I definitely didn’t say, and don’t think, that she should neglect her personal life to keep her blog updated. I wish Lolo all the best. Health and happiness are much more important than blogs, books, and business.

    Speaking unkind words is never the right way to get what you want. Lolo doesn’t owe her readers anything. Her life is her own and it is none of our business why she didn’t post for so long.

    I’m embarrassed that people would think they are so entitled to read new entries on a blog that they would speak harshly and force Lolo to share personal information about herself that is none of our business.

    I’m sorry, Lolo. I missed your posts, too, but that didn’t make me dislike you or regret buying everyone in my family a copy of your cookbook for Christmas. :)

    I made this sauce tonight, and it was amazing!! I let it simmer for about 20 minutes, and it thickened up a bit, which I liked. I thought it tasted less like an alfredo sauce, and more of a peanut sauce (or cashew, I guess!). I’ll be making this on a weekly basis. Thanks for posting this :-)

    Your book is so amazing! I have already tried sweet and sour tofu and I loved it! I am the only vegan in my family they are all big meat eaters so most of the time they are very skeptical about vegan anything but they tried it and they liked it and said they wanted me to make it for everyone next Christmas! : )

    Love love love the new cookbook! Every recipe is absolutely delicious and the pictures make me want to spend every day revelling in vegan goodness!

    This alfredo recipe is a huge hit with my family (even my little five year old asks for seconds) but I’m wondering if there is a trick to heating it without it over-thickening? I find that once I add it into the pasta/veggies to heat up, it gets a bit more gloopy than the creamy sauce pictured. Is it is just me? Do you add extra liquid?

    Thank you so much for your blog and simple ideas. It’s a wonderful addition to my daily life and I am glad to see you’ve taken a bit of time for yourself, too.

    I came across this book, “Vegan Yum Yum” while thumbing through vegan cookbooks at Borders yesterday afternoon. I think most vegan cookbooks are pretty dull, but I was really drawn to this one! Great recipes, delicious photographs, easy to follow recipe plan and I like the “matter of fact” commentary. Every recipe ( no exaggeration) cries out, “try me, try me”". So I bought it , without hesitation, and just tasted my first recipe, “Creamy Broccoli Bake”. Wow! it was delicious. I made a few changes…a bit less oil, and I used quinoa instead of orzo ( didn’t have any on hand). I can’t wait to try many of the other recipes….Thanks Lauren. You did a superb job and welcome back.
