Homemade Apple Butter

So basically, my crock pot hates me.
It’s supposed to be one of the easiest appliances to use, right? Everytime I’ve tried to something has gone wrong. Things are either over cooked or undercooked, and definitely not very tasty. I decided I needed to find a recipe that couldn’t possibly fail. When I realized I had 5 pounds of apples, I had my answer.
I found a recipe for crock pot apple butter, and it seemed super easy. Peel and chop the apples, add sugar and spices, let cook overnight. I could do that. My crock pot could do that.
It turns out peeling and chopping 5 1/2 pounds of apples is kind of a pain in the a…pple. Your hands get all slippery and tired, and you get sticky apple juice everywhere. Then the apples didn’t fit into my crockpot, so I had to puree them all in order to make the most of the space I had. Finally I got everything in the crock pot and turned it on. The recipe said the whole thing would take less than 12 hours. Great!
12 hours later? Not even close to done.
I ended up cooking this apple butter for a full 24 hours. Between prepping, cooking, and canning, the whole project took 26 hours! 26! A lot of that was downtime, but still. My crock pot is cursed.
It was so worth it though. It’s dark, sweet, tangy, silky, and spicy. It is SO GOOD on toast with a little vegan margarine, you have no idea. It’s like concentrated apple pie. I wish you could taste it. Well, actually, you might be able to!
Since I have a lot of this stuff, and it’s such a b…anana to make, I’m going to give away three jars to VeganYumYum readers. Yay!

Those people win a 1/2 pint jar of organic apple butter, complete with fun spreader knife and recipe card. I’ll email you to tell you you’ve won: just reply with a mailing address.
Some general rules: If you don’t leave a valid email address with your comment, I’ll pick another person. If I don’t hear back from you with your mailing address, I’ll pick another person. I’ll ship overseas, so don’t worry, everyone can play!
For those of you who don’t win, here’s the recipe. I used this recipe found I online.
Crock Pot Apple Butter
Makes 4 Pints
5 1/2 lbs Apples, peeled and finely chopped (as many different kinds as you can!)
4 Cups Sugar
2-3 tsp Cinnamon
1/4 tsp Ground Cloves
1/4 tsp Salt
1 Sprinkle Nutmeg
Peel and core the apples. Slice finely or puree in a food processor. Add apples and remaining ingredients to your crock pot. Cook on high for 1 hour, then on low for 8-10 hours. Remove lid (or crack it open a bit) and cook on high until a wooden spoon stands upright in it. The apple butter will have reduced by about half to get to this point. Blend if desired.
Fill sterilized jars with simmering apple butter and process for 15 minutes in a boiling-water bath. Remove jars and let sit, undisturbed, overnight. Test the seals and refrigerate any jars that have not sealed completely. Fully sealed jars will keep for 18-24 months unopened. Once opened, the apple butter will keep for 2 months in the refrigerator, or indefinitely in the freezer.

I think we may have the same slow cooker. I made apple butter for the first time this year also, and I would say that my time frame is looking more like yours than the recipes. Although, I do have to say that I loved the way mine turned out.

i used to buy apple butter from this teeny little jam store in niagara on the lake. turns out they’re not actually teeny, and for as much as i can find thier jams everywhere, the apple butter is nowhere to be found.
i’ve tried grocery store kinds, but it’s really not the same.

I have used that same recipe twice. Second time, I just left the skins on, and made sure to blend it all really well. I barely noticed they were in there. Much easier.
I also had to cook mine for 24 hours. I think the recipe is wrong ;)

I don’t need apple butter as I made some myself (plus I’m in England anyway!), and I hope this isn’t a stupid thing to ask but do you think your crock pot might actually be broken? The first one I bought didn’t cook things right at all and I thought it was me doing everything wrong with it which was really disappointing. In the end I returned it (after reading reviews on Amazon where others had had problems with that make) and bought a different brand and it works fine, turned out there was something wrong with the first one and it wasn’t working properly. Just a thought as I know how terrible it can be to put the time and effort into using one for things not to come out right….

I’d love a jar of your apple butter. Looks mighty yummy. I also thought my crock pot was evil, my beans were never cooked right and i either ended up with little pebbles or mush. I stashed the pot away for a good 6 months b4 i gave it another chance…we’re still working things out ;)

Wow, how did you read my mind? I found this recipe yesterday, for relatively healthy muffins, which calls for apple butter. I had no idea what that is and planned on looking for recipes, and here you are! I also have a crockpot that is not used enough, and I never thought to make something like this in it.

My crockpot hates me too. I set it up one blustery fall day to make me some black bean and bulgur chili while I was away at work and school and it was all good when I left, starting to steam and everything. I got back hours later and it was stone cold. Did not make me a happy camper.

You know what’s funny? I recently bought a rice/slow cooker and I love it. But I’ve also seen more old-skool 70s crock pots around lately.
Also, I’ve been trying to bake once a week and when I asked my husband what he wanted this week, he said “apple butter.”

I don’t even own a crockpot. Peeling apples is a lot of work! Someone told me that you don’t actually need to peel them, but I have never tried it. I would love some apple butter.

YUM! That looks awesome! I would love to win a Lolo-special jar of apple butter…although the mention of pear butter above makes me want to break out the possessed crockpot (it’s a nice little one…just slightly rebellious) to use up my pears! Ooh, apple butter sounds wonderful — I should try that next week, when I’ll be on vacation. (Even a 26-hour slow-cooker recipe should fit into my schedule when I’ve got a whole *week* off. Hee hee! [I really need a break from work; can you tell?])
Even if I don’t win, thanks for your terrific blog! I have something like 50 of your posts marked as “keep new” on Bloglines, to try when I get the chance, plus probably another 10 or 15 in my online and hard-copy recipe files. I didn’t read all the comments so maybe this is old news, but stores like Bed, Bath and Beyond sell this really nifty apple peeler/corer/slicer for $15-$20 that would speed up the process.

I hear you on making butters. I made pear butter and it took waaaaayyyy longer than anticipated (okay, in fairness I used 50 lbs of pears, but nevertheless) and it made far less than I had expected. sigh.. if I think of how many pints of delicious apple butter I could have made with those hundreds kilos of apples that are now rotting way in our garden, damn. I’ve eaten thousands of them raw and made a pie every time I had the chance, but there were so many left and we didn’t have the time to juice them or make apple butter, nor the storage space. It’s a shame.

I wonder if it’s necessary to add sugar, as the apples really boil down (or up?) their sweetness anyway–the jar in my fridge is just apples, and i keep digging into it with my finger. not very sanitary, but fun.

My mom used to make homemade apple butter, but I have never given it a try (I remember it taking her a looooong time!) So I just buy it. Bad, I know… but it is soooo delicious! Perhaps I will give it a go if I happen upon a load of apples.

That looks *quite* tasty! I remember my grandmother’s apple butter – not nearly that dark, but sweet and spicy and silky on the tongue. I don’t think I’ve ever used a crockpot for apple butter – it would make sense, as I don’t own one – but I wish I could take the time and space to make this in a stockpot at home!

Thank you for this recipe! I have an apple tree and am always trying to think of new ways to preserve them. All the recipes for apple butter I have come across involve passing the cooked apples through a food mill or strainer, so I deemed them much too complicated. Ditto on the apple peeler/corer/slicer suggestion Its a HUGE time saver and makes really cool apple spirals! doesnt work so great on softer flesh or older apples- they tend to get mushed a bit in the process.

Next time – don’t peel or core the apples. Quarter them, cook them down (it goes fast) and then put them through a Foley mill or mesh strainer with a pestle to get the skins, stems, and seeds to release.
This way, you get the benefit of the pectin in the seeds and peels, too. Then, throw the whole hot mess into the crockpot and continue with the recipe.

It’s so weird that yours is cursed- I’ve never had any trouble with my crock pots. In fact, I recently broke down and bought a sleek stainless steel number.
I feel very James Bond when I use it! (The old one, with blue flowers, made me feel very Betty Crocker. James is better). Maybe you just need to experiment with another crock- maybe a friends’ so you don’t have to buy a whole new one just for testing purposes?

This looks like the apple syrup I used to get in Holland – it’s a mix between apple sauce but in the consistincy of syrup, also great on toast. Mmm, looks good! Unfortunately, I don’t have a crock pot but I still love looking at your pictures. :)

oh, wow — when i was growing up we had an apple orchard behind the house (well, my parents still do, but i live in the city now) and we used to spend fall cooking applesauce and apple butter on the stove. using a crockpot is an awesome idea!!

Hmmm… My only crock-potting trick is to let it run on high for the first hour or so, in order to let it heat up, and then turn it down to low for the rest of the time. If I start out on low, it never quite gets warm enough to do anything.
But, from the recipe, it looks like you’re already doing that, so I don’t know what else could be going on!

I’ve never tried apple butter. Although after reading a few posts on people making crockpot apple butter I might have to go for it.
I have mixed results with my crock pot. Sometimes what comes out is perfect, sometimes not so much but it’s getting better as I get a feel for how it cooks.

I LOVE apple butter, but the last I had was some Musselman’s in a jar that, halfway through, I realized had HFCS in it. Not that I don’t check ingredients, but I’d bought it before reading Skinny Bitch (which changed my outlook on HFCS). So donated the rest to our local Food Not Bombs. And I’ve yet to search for natural apple butter. I’m sure it’s around, but I’m sure your homemade stuff is a million times better.

Oh my god, I LOVE apple butter! I used to mix it in with cottage cheese and eat it with a spoon. Wonder if there’s a vegan equivalent… also, in case you ever decide to make it (or applesauce, or apple pie, or apple crisp, or anything else involving lots of apples) ever again, I highly recommend investing in one of these. It’s one of my favorite kitchen gadgets EVER.

Oh boy, this looks delicious. My grandmother used to make apple butter all the time and it became one of my very favorite things. Come to think of it, I actually began dating someone because he was making apple butter!

I have to be honest and say that I have admired this blog for months now, having sampled many of the recipes with great success every time!
I never usually like to comment on blogs – I don’t really know why. I guess I feel a shy or silly (which really is rather silly) aha. However, when the chance came up to actually sample one of your very own gourmet creations – well I simply could pass up the oppitunity!
This looks amazing and seeing as I an appleholic (more or less) – buying at least 20 each week – it’d be a new way of enjoying sucha delicious fruit!

I think our crockpots are related. Mine overcooks, nothing is perfect 8 hrs later, it’s over cooked! I did overnight oatmeal once, it was burnt. :(

Your photographs are beautiful on this site. My son told me about your site as he uses it often for good recipes. Your apple butter post reminded me of the time before My father-in-law passed away. I also had lots of apples and I decided to make him some homemade apple butter. It was my first try. I took him over several jars and he tried it on his toast. The greatest compliment I ever received was when he told me it tasted as good as what his mother used to make for him when he was a young boy. He said he hadn’t had any that good until the day I brought him his gift. I was so happy.

I made my crock pot go away, I’m too impatient. I do as much as I can in a pressure cooker – this recipe got me thinking – I’m not sure a pressure cooker will do the trick in this case.
So before I go off and experiment once again with my pressure cooker, I’ll toss my hat in the ring for some apple butter! Either way I love your site and I’ll be back.

Oooh……I love apple butter! My family used to make it every year in a big copper kettle over a fire outside. I’ve never tried to make it in a crockpot, but now I just may have to. Now that I live in an apartment, I doubt the whole fire-pit-in-the-yard method is an option this year. Thanks for theh recipe!

I’ve had apple butter only once in my life. It was at Universal Studios and it was the best thing ever! I bought some at a store to re-live the deliciousness but it was terrible! I can only image how wonderful this must be!!!! If I won I think I might explode from excitement!

i don’t want any apple butter, thank you, but i wanted to point out that an apple peeler/corer/slicer is SO WORTH IT for things like this, as well as any time you need peeled sliced apples and you don’t care too much about having neat slices (pies, crumbles, etc). i’m not generally a fan of super-specific kitchen gadgets, but i am a diehard peeler/corer/slicer fan!
plus they look so old-fashionedy (since they haven’t changed in design since 1890 or whatever).

Apple Butter just doesn’t work for me in the crock pot. Mine’s done in 5-6 hours or so baked in a large, fairly shallow baking dish.

I made this today (w/a couple tweaks), and it was AMAZING! I have a really big crockpot so I doubled the recipe, but instead of sugar, I added two cans of frozen apple juice concentrate and 1 c of maple syrup. Thank you so much for the info on how to cook apple butter in my crockpot!!!
