Cucumber Tea Sandwiches

Stumble it!
I love cucumbers. They smell heavenly and are have a refreshingly cool crunch to them. Tea sandwiches are great in their standard form, but why not make open-faced sandwiches to show off your cucumber? Okay, that didn’t come out right, but you know what I mean.
These are so easy, you’re going to laugh. Or rather, you’re going to make them for guests and try not to smirk when your party-goers fawn all over them.
“Oh, those? They weren’t any trouble at all!”
Everyone will think you’re just being modest. There are four steps. Ready?
1. Shave long strips of cucumber with a regular vegetable peeler. Pat them with a paper towel if they seem too wet.
2. Spread your favorite sandwich bread with some Tofutti Better Than Cream Cheese.
3. Lay out cucumber in a pretty pattern, slightly overlapping. If you line up the cucumbers to one side of the bread, you’ll have long enough strips left over for a second sandwich.
4. Cut off crusts and cut to desired shape. Use a cookie or biscuit cutter for non-square/triangular sandwiches. Sprinke with kosher salt and fresh pepper. Garnish with parsley, mint, or watercress.

Thank you so much for this recipe! I’m a tea buff, and tea foods tend to rely heavily on cream, cream cheese, butter, and eggs. Can I put in a plea for a scone recipe? This is absolutely my favorite food blog…in the past week I’ve made the tea cookies (of course!), blueberry (non-)muffins, and broccoli soup with coulis. All delicious. Thank you for being here!

I get Tofutti Better than Cream Cheese at my local grocery store. I think a lot of major grocery stores carry it now. Look for it by the regular cream cheeses!

I love to garnish cuke sandwiches with lemon zest. Also, vegenaise is a good sub for Better than Cream Cheese. A little lemon juice mixed with the vegenaise makes for a nice, fresh zip to the sandwiches.

Fantastic. I made mine with the german dark bread that has dense thin slices (usually 12 grain or pumperknickel) and that my family calls “square bread” because the loaf is square, no crusts to cut off, it looked beautiful!!!

try more seasoning they really are beauriful though like some mayo or m. whip along with some ranch or either some good seaons italian seasoning and some dill on top. But thankyou for the decorating tip. Also rye bread goes well.

Okay I hate to cook so have so questions from a dummie. Do you have to do anything to the cucumbers ahead of time so you don’t taste the rind which can be off putting? Also how do you cut them with cookie cutters without them getting mangled?
