The grocers will have big chile roasters set up outside the store. The roasters are run off from propane. It is a big cylindrical cage that is turned over a flame. So after purchasing the big bag of chiles, you just hand it to the roaster, they dump them in the hopper and have at it. The smell is unbelievable. You know it is the beginning of fall when you smell the chiles roasting! Hi All:
