The leftover No Knead Bread makes excellent vegan french toast. I added a little bit of Silk Soy Nog to the batter to make it extra tasty. It was!

Banana Oat Muffins

What’s better on Saturday morning than banana muffins fresh out of the oven?

Every once in a while I have the energy to actually bake something as soon as I wake up. The recipe for these muffins (found in The Garden of Vegan) was recommended to me by a friend a few weeks ago. They turned out to be so delicious that I secretly hope our bananas get overripe so I’m “forced” to make them.

I never have the oat bran the recipe calls for, so I always end up subbing plain rolled oats 1:1 and have been really happy with the results. The recipe calls for olive oil, but I’ve always used canola because there is something strange to me about baking sweets with olive oil.

This morning, however, I discovered we were out of canola when I was mid-way through the batter and the oven was already preheated. I used olive oil and, lo and behold, you can’t tell the difference! I suppose that’s because it only calls for 1/3 of a cup. It’s good to know, because people keep telling me how scary canola oil is. Maybe I should do some research to find out for myself.

Vegan Brunch, Chez Moi

Last weekend we invited a few friends over and had a delicious vegan brunch. I planned ahead for the first time in my life, and oh man did it pay off big time.

The night before, I made all the waffles and refrigerated them, following a tip in Vegan with a Vengeance. The following morning, all I had to do was set up a waffle station:

That’s Raisin-Oat-Banana in front and Lemon-Corn in the back. They were both good, but the Lemon-Corn was the clear favorite.

I had a little bit of everything:

Clockwise from the top: Tofu scramble with pinto beans, corn, and spinach, topped with vegan sour cream and avocado, lemon corn waffles, Tempeh Sausage Crumbles from VwaV, and potatoes made by my dear friend Sandy.

Oh, and did I mention mimosas? Mimosas.

Mani’s


Tofu Scramble from Mani’s

Our meal at Mani’s in LA was by far the most disappointing. The service was very slow, the food sub par.

I ordered the tofu scramble which my waitress said, “was popular with the health types” when I asked about it. After a generous helping of salt it approached being edible. I’m sure the asparagus came from a bag in their freezer, and the fruit tasted like it came from a can. Next to my toast were several pats of butter, much to my dismay.

I know not everyone knows what “vegan” is, but if you’re going to offer specifically vegan things on your menu, labeled as such, it’s a nice touch to make sure the vegan plates don’t go out to the tables with butter on them. Thankfully they were in little foil wrappers so we could easily remove them from the plate, but it didn’t give us much confidence that butter, or other non-vegan things, weren’t used in the preparation of our meal.

Stewart’s meal wasn’t great either, the Vegan Wheat-Free Pancakes:

Perhaps the bakery section of Mani’s is good - they seemed to have a decent selection of vegan baked goods in their pastry case, but I wouldn’t recommend going there for a sit-down meal. The service was slow and the check was quite large, making the entire experience a bit of a let-down.

Cheesy Muffin Breakfast, with tea

This is one of my favorite breakfast things to make. Not only is it quick and easy (as long as you have some leftover cheesy sauce), but it’s also vaguely similar to eggs florentine, without the icky eggs. Crispy, hot, cheesy, spinachy: what else could you ask for?

Simply slather the cut sides of a halved english muffin with cheesy sauce and fresh baby spinach and pop them into a 350º oven, directly on the rack, until toasty. Yum.
