I think most vegan cookbooks are pretty dull, but I was really drawn to this one! Great recipes, delicious photographs, easy to follow recipe plan and I like the "matter of fact" commentary. Every recipe ( no exaggeration) cries out, "try me, try me"". So I bought it , without hesitation, and just tasted my first recipe, "Creamy Broccoli Bake". Wow! it was delicious. I made a few changes...a bit less oil, and I used quinoa instead of orzo ( didn't have any on hand). I can't wait to try many of the other recipes....Thanks Lauren. Every recipe is absolutely delicious and the pictures make me want to spend every day revelling in vegan goodness! This alfredo recipe is a huge hit with my family (even my little five year old asks for seconds) but I'm wondering if there is a trick to heating it without it over-thickening? I find that once I add it into the pasta/veggies to heat up, it gets a bit more gloopy than the creamy sauce pictured. Is it is just me? Do you add extra liquid?
