Hurry Up Alfredo with Basil

Alright, are you ready for the first recipe preview from the VYY cookbook?

This is one of my favorite recipes in the book. I make it almost once a week. It’s the perfect creamy pasta sauce when you’re feeling like alfredo. It’s also a great sauce for casseroles, over steamed veggies, on top of lasagna — wherever you want a basic creamy sauce. So not only is it really versatile, but it’s also really quick!

The whole sauce is made in a blender, so the faster you can toss ingredients into a blender, the faster it’s done. This also makes it super easy for additions. Recently I’ve been adding whole roasted red peppers (the kind they sell water-packed in jars).

Hurry Up Alfredo
Makes 2-3 Servings

1 Cup Soymilk
1/3 Cup Raw, Unsalted Cashews
1/4 Cup Nutritional Yeast
3 Tbs Low-Sodium Tamari or Soy Sauce
2 Tbs Earth Balance Margarine
1 Tbs Tahini
1 Tbs Fresh Lemon Juice
2 tsp Dijon Mustard
1/2 tsp Paprika (smoked is awesome)
1 Pinch Nutmeg
2-4 Cloves of Garlic, optional
Black pepper, to taste

Add all the ingredients to a blender and blend until smooth. This may work best in a high-speed blender (like a Vita-Mix), but you can definitely make it in a regular blender. Just blend extra-long, or perhaps strain if if you want it perfectly smooth. Tiny bits of cashews won’t hurt anyone though!

If you’re making this sauce for pasta, drain the pasta and return it to the hot empty pan. Pour the sauce over, place on medium heat, and stir until heated through. Serve with lots of fresh cracked black pepper. I love it with steamed broccoli added in!

    WOW, JUST WOW. I’ve just gone to her flickr page, and she is completely fine posting pics of her dogs. I just don’t get it! Why would you suddenly ignore your blog for 3 months. This blog has made you into a great success, that doesn’t happen often for us bloggers, so I’m stumped!

    If we knew we were exchanging a fabulous blog with fresh recipes and photos for one cookbook, I don’t think any of us would have bought the cookbook. I would’ve donated to the blog, and I’m sure a lot of people would’ve, if you wanted to make some money off of all of your fans.

    Now I just want to return my copy of the book to make a point. This is just rude to the people who supported you in the first place.

    these people are rude, don’t listen to them. you have a right to post when and if you want to, regardless of whether you are having issues or not. blogging is a voluntary and very generous thing to do, something is very wrong when the takers (in this case the readers above me) start declaring a right to your posts. take more time off!! take care of yourself! i’ll be here when and if you ever you come back!! thanks for everything you’ve given to all of us. i love your blog! and subsequently respect you as a person!

    I can only speak for myself, but my comment (#203) was based on the particulars of this situation. I certainly don’t feel like I’m owed posts, or anything else, by Lolo, and I definitely didn’t say, and don’t think, that she should neglect her personal life to keep her blog updated. I wish Lolo all the best. Health and happiness are much more important than blogs, books, and business.

    Speaking unkind words is never the right way to get what you want. Lolo doesn’t owe her readers anything. Her life is her own and it is none of our business why she didn’t post for so long.

    I’m embarrassed that people would think they are so entitled to read new entries on a blog that they would speak harshly and force Lolo to share personal information about herself that is none of our business.

    I’m sorry, Lolo. I missed your posts, too, but that didn’t make me dislike you or regret buying everyone in my family a copy of your cookbook for Christmas. :)

    I made this sauce tonight, and it was amazing!! I let it simmer for about 20 minutes, and it thickened up a bit, which I liked. I thought it tasted less like an alfredo sauce, and more of a peanut sauce (or cashew, I guess!). I’ll be making this on a weekly basis. Thanks for posting this :-)

    Your book is so amazing! I have already tried sweet and sour tofu and I loved it! I am the only vegan in my family they are all big meat eaters so most of the time they are very skeptical about vegan anything but they tried it and they liked it and said they wanted me to make it for everyone next Christmas! : )

    Love love love the new cookbook! Every recipe is absolutely delicious and the pictures make me want to spend every day revelling in vegan goodness!

    This alfredo recipe is a huge hit with my family (even my little five year old asks for seconds) but I’m wondering if there is a trick to heating it without it over-thickening? I find that once I add it into the pasta/veggies to heat up, it gets a bit more gloopy than the creamy sauce pictured. Is it is just me? Do you add extra liquid?

    Thank you so much for your blog and simple ideas. It’s a wonderful addition to my daily life and I am glad to see you’ve taken a bit of time for yourself, too.

    I came across this book, “Vegan Yum Yum” while thumbing through vegan cookbooks at Borders yesterday afternoon. I think most vegan cookbooks are pretty dull, but I was really drawn to this one! Great recipes, delicious photographs, easy to follow recipe plan and I like the “matter of fact” commentary. Every recipe ( no exaggeration) cries out, “try me, try me”". So I bought it , without hesitation, and just tasted my first recipe, “Creamy Broccoli Bake”. Wow! it was delicious. I made a few changes…a bit less oil, and I used quinoa instead of orzo ( didn’t have any on hand). I can’t wait to try many of the other recipes….Thanks Lauren. You did a superb job and welcome back.
