I’d also recommend trying to veganize his recipe for salpicon if you happen to come across it. Salpicon is a simple salad of shredded beef/chicken, potatoes, romaine, avocado, chipotels and queso fesco with a basic olive oil and vinegar dressing. It seems kinda plain, but believe me, it is tasty stuff.
