I made this yesterday- and it was fantastic! I used my Vitamix and the filling was perfect. I didn't have enough pistachios, so I mixed in some granola with them. Your experimentation here has re-inspired me to create something like it. I've never used the PPK forums, but it would be great to meet other creative, fun, greater-Boston vegans who love to cook (I'm in Somerville). Next time there's a gathering, I'd love to contribute!
